Ok so the focus is the ramen. It’s not good, it’s not mediocre, it’s downright bad.
- Egg isn’t Ajitsuke Tamago, it’s not seasoned, it’s not even soft boiled, it’s literally an over cooked hard boiled egg, whoever cut mine didn’t do a great job, I got a sliver of yolk.
- the pork is not chashu, it’s some random cut, and it’s sliced with the grain so it’s tough and chewy. Pick pork shoulder or belly, slowly braise it, chill it overnight in the fridge then slice and don’t be so cheap with your tiny portion.
- The noodles were overcooked, they were over cooked for even regular pasta.
-The broth was under-seasoned, I actually asked for soy, it was totally bland and near tasteless. I don’t better they’re really using a tare, I think most likely they whisk in whatever flavour you order into a base stock in the bowl.
-no one wants a quarter leaf of cabbage in their ramen, how am I supposed to manoeuvre this with chopsticks and a spoon?
The gyoza are definitely homemade and the sauce that comes with them is good! Unfortunately there is next to nothing in them so you’re essentially eating dumpling wrappers. They haven’t folded them properly, either.
These things are so easy to nail, the bowl just screams that whoever is preparing it lost their passion years ago or is just not happy making the food.
At 16 euros for a tea, a ramen with a sliver of tough tasteless pork with 4 gyozas (containing about a tablespoon of pork in all 4 dumplings) and a bowl of plain rice - I think it’s a joke.
Online you can learn how to make top quality ramen, you just have to try. I have actually emailed these guys recipe links in how to fix everything.
People are passionate about ramen in a big way, unfortunately in this case, just not the people making it.
I would have given this 3 stars if it wasn’t for the 22 year old waiter aggressively getting in my face forcing me to tell him to back off. Though likely my fault a Japanese man was seated next to me and I asked him his opinion which he said was similar to mine. I gave it a thumbs down and then was told by said waiter that I can’t talk to other customers. The bald waiter was very nice and accepted my apology for upsetting the boy.
Edit: I mean, read their reply, you know to avoid ???? liars with zero customer service.

가지마세요ㅋㅋㅋㅋ 개짰어요 진짜... 2년전 피렌체까지 와서 여기 온 게 후회돼요. 늦은저녁 연 식당이 없고 이태리음식에 물려 아시아식당와서 칼칼한 라멘 먹어볼까 해서 들어간 곳인데. 일단 웨이팅도 길었고(왜 인지 전혀모르겠음.. 현지 맛집이라고 소문났나;) 들어가서 앉아서 주문하고 음식나오는데도 너~~~~무 오래걸림. 심지어 저 볶음면 개짜서 다버렸어요. 보이시나요? 저거만 다 남겼어요. 라멘은 쏘쏘... 음식나오는 시간도 길고 볶음라멘 소금덩어리라서 한국인이라고 소금 때려부었나 싶었네요. 가지마세요...

Vado molto spesso a mangiare un boccone in questo locale vivacissimo, molto fiorentino, ma anche molto internazionale, una miscela di studenti, impiegati, operai e professionisti che lavorano nei dintorni, e molti turisti, non pochi asiatici, che hanno scoperto che in questo bar-tavola calda, si mangia un ramen "strepitoso". Il locale è semplice e pulitissimo, lo staff veloce e molto gentile. E' spesso pieno, specie nelle ore di punta, quindi fate uno squillo prima per prenotare. Io mangio solo giapponese qui, ma so che fanno anche molti piatti caldi e freddi di cucina toscana e italiana. Unico neo, ma che non compromette il mio 5 stelle convinto, è il fatto che sia servita l'acqua minerale in bottiglie di plastica. Altamente consigliato!!

Essen ist gut, Preise sind für Florenz OK, Bier ist richtig günstig. Charm sucht man vergeblich.
